crazy weekend!

I can not believe another week has flown by here are a few recipes from this week I enjoyed!

this pork loin recipe was sooooooo good great for a fall day!

The Best Pork Loin Recipe Ever
Ingredients:
Paste: (Marinade)
· 1 cup light brown sugar
· 2 tsp finely chopped garlic
· 2 tsp ground ginger
· 1/2 tsp ground cloves
· 1/4 tsp ground black pepper
· 1 tsp kosher salt
Pork Loin:
· 2 tbsp Goya adobo seasoning
· 2 tbsp minced shallot
· 1 tbsp minced garlic
· 1 tbsp minced fresh thyme leaves
· 1 tsp minced fresh oregano leaves
· 1 tsp minced fresh parley leaves
· 1 package pork loins (They come in twos where we get ours, but if buying a single, go for a 5 lb loin)
Method:
In a small bowl, combine shallots, garlic, thyme, oregano, adobo and parsley. Rub the mixture all over pork, pressing firmly, and refrigerate overnight.
Preheat oven to 350°F.
Place pork loins in a roasting pan and bake for 30 minutes. Remove pork from the oven and let stand until cool enough to touch.
Spread the paste all over the loin. Return to oven and cook until it has developed a good crust on the outside and is cooked to your desired doneness. About 25 to 30 minutes. (Place a cookie sheet under your roasting pan if it’s shallow, the brown sugar will foam after about 20 minutes in the oven, and could spill over in a shallow roasting pan.)
Remove pork from pan and let rest for 15 minutes. cut into slices, drizzle with pan juices and garnish with a sprig of thyme.
Serve immediately.
Plating:
The original recipe called for the loins to be buried in a mushroom fricassee. While that is a very French plating, I’d be ashamed to cover something this lovely with a thick sauce like that. I prefer to simply place a bit of the sauce on the plate, arrange a suitable portion in the sauce, drizzle with the pan juices, and garnish with fresh thyme or oregano (or both, if you’d like.)Serve with something citrusy for an amazing taste combination

here is a easy lasagna recipe that is still good!

Ingredients
1-½ pound Ground Beef
1 pound Hot Breakfast Sausage
2 cloves Garlic, Minced
2 cans (14.5 Ounce) Whole Tomatoes
2 cans (6 Ounce) Tomato Paste
2 Tablespoons Dried Parsley
2 Tablespoons Dried Basil
1 teaspoon Salt
3 cups Lowfat Cottage Cheese
2 whole Beaten Eggs
½ cups Grated (not Shredded) Parmesan Cheese
2 Tablespoons Dried Parsley
1 teaspoon Salt
1 pound Sliced Mozzarella Cheese
1 package (10 Ounce) Lasagna Noodles
(add 1/2 Teaspoon Salt And 1 Tablespoon Olive Oil To Pasta Water)
Preparation Instructions
Bring a large pot of water to a boil.
Meanwhile, in a large skillet or saucepan, combine ground beef, sausage, and garlic. Cook over medium-high heat until browned. Drain half the fat; less if you’re feeling naughty. Add tomatoes, tomato paste, 2 tablespoons parsley, basil and salt. After adding the tomatoes, the sauce mixture should simmer for 45 minutes while you are working on the other steps.
In a medium bowl, mix cottage cheese, beaten eggs, grated Parmesan, 2 more tablespoons parsley, and 1 more teaspoon salt. Stir together well. Set aside. Cook lasagna until “al dente” (not overly cooked).
To assemble:Arrange 4 cooked lasagna noodles in the bottom of a baking pan, overlapping if necessary. Spoon half the cottage cheese mixture over the noodles. Spread evenly. Cover cottage cheese with a layer of mozzarella cheese. Spoon a little less than half the meat/sauce mixture over the top.
Repeat, ending with meat/sauce mixture. Sprinkle top generously with extra Parmesan.
Either freeze, refrigerate for up to two days, or bake immediately: 350-degree oven for 20 to 30 minutes, or until top is hot and bubbly.

rainy day pot roast!

today we had this pot roast recipe, its a perfect recipe for a fall rainy day. Add a loaf of italian bread to dip in the gravy and you got yourself a good homecooked meal!

· one beef pot roast of your choice
· 1 box, (2 envelopes) Lipton Onion Soup Mix
· baby carrots
· new potatoes
· 2 cups water

Preparation:
Place beef pot roast in crockpot and sprinkle with Lipton onion soup mix. Add carrots and new potatoes. Pour water over pot roast. Cook on low 8-10 hrs or until tender. Thicken the gravy with a little four or cornstarch.

Another weekend of goodies!

Man we ate good this weekend, good food and football who could ask for more?

Friday night kicked off with crock pot jumbalaya

Crockpot Jambalaya
Ingredients
1 ½ lb. chicken breast
28 once can of tomatoes
1 cup of chicken broth
2 tsp parsley
1 tsp cayenne pepper
1 cup of diced celery
1 pound of turkey sausages sliced
1pound of thawed cooked shrimp
1 chopped green pepper
2 tsp Cajun seasoning
2 cups of cooked rice

Cut into cubes chicken. Slice sausage. Chop onion, green pepper, & celery. Put all into crock pot. Add remaining ingredients except shrimp & rice. Cook on low heat for approximately 7 hours. About 30 minutes before serving, add cooked Shrimp & cooked rice.

this was very good, my son had four bowls!!

The next night was my favorite I am a sucker for roasted chicken... the kicker was a recipe I had for green beans these reminded me of my nana and they were such a comfort item.

Herb roasted chicken

Ingredients
2 teaspoons Italian seasoning
1/2 teaspoon seasoning salt
1/2 teaspoon mustard powder
1 teaspoon garlic powder
1/2 teaspoon ground black pepper
1 (3 pound) whole chicken
2 lemons
2 tablespoons olive oil

Directions
1. Preheat oven to 350 degrees F (175 degrees C).
2. Combine the seasoning, salt, mustard powder, garlic powder and black pepper; set aside. Rinse the chicken thoroughly, and remove the giblets. Place chicken in a 9x13 inch baking dish. Sprinkle 1 1/2 teaspoons of the spice mixture inside the chicken. Rub the remaining mixture on the outside of the chicken.
3. Squeeze the juice of the 2 lemons into a small bowl or cup, and mix with the olive oil. Drizzle this oil/juice mixture over the chicken.
4. Bake in the preheated oven for 1 1/2 hours, or until juices run clear, basting several times with the remaining oil mixture.


Sweet And Sour Green Beans
1/2 package bacon (6 or 7 slices)
1/2 onion, chopped
32 ounces french style green beans (or other green beans)
2 T vinegar
2 T sugar
salt and pepper to taste

Cut bacon into one inch segments. Place bacon and onions in skillet. Cook over medium heat until browned, stirring often. Remove to plate. Add beans to bacon grease and continue cooking over medium heat until they are to desired tenderness. Add vinegar and sugar. Stir. Add bacon and onions back and let simmer a few minutes, stirring often. Salt and pepper to taste.

Sunday we had BBQ meat loaf wasn't thrilled my other recipe for meat loaf was way better however I found a good recipe for german potato salad and boy was it good as well!

German potatoe salad

2-4 baking potatoes
4 slices of bacon
1/2 onion chopped
1/2 green bell pepper chopped
2 beaten eggs
1-2 hard boiled eggs
1/4 c. vinegar
1/4c. sugar
1/4 tsp pepper

Boil potatoes until done around 20 minutes. saute four slices of bacon then crumble. Add bacon onion and pepper to grease and cook about 3-4 minutes. Combine 2 beaten eggs with vinegar sugar and and pepper and gradually add to pan. stir until thickens. toss with chopped potatoes and garnish with hard boiled egg.

Labor day delights!!!

Over the weekend we had a old friend visit and his son. We have known them for many years it was nice to see them. For the weekend I decided to try some new recipes and man were they good! The first was a buffalo chicken, I cooked chicken nuggets for the kids because this is definitly not kid friendly but oh man I should have made double! Please comment with your review if you try any of these

Buffalo Chicken

4 boneless, skinless, chicken breast halves (5oz each)
-1/4 t. salt-1/4 t. pepper-2 eggs
-1/2 c. seasoned bread crumbs
-3 T. canola oil
-1/4 c. buffalo wing sauce
-1/4 c. shredded provolone cheese =
-1/4 c. shredded part-skim mozzarella cheese
Flatten chicken to 1/2 inch thickness
Sprinkle with salt and pepperIn a shallow bowl, whisk eggs
Place bread crumbs in another shallow bowl
Dip chicken in eggs, then coat with bread crumbs
In large skillet over medium heat, cook chicken in oil for 7-10 minutes on each side or until chicken juices run clear, adding wing sauce during the last 2 minutes
Turn to coat chicken (I only coated one side with wing sauce).
Sprinkle with cheeses. Cover and cook until cheese is melted.

The next recipe WOW! literally these guys were begging for more! The reviews were phenomenal and this is hands down the best burger I have ever eaten!!! and Aaron and Jorge agreed!!! This is going on every superbowl, potluck, meal ENJOY!!!

Chipotle Sliders -

-1pkg (12oz) Hawaiian Sweet Rolls
-1 tsp. salt
-1/2 tsp. pepper
-8 tsp. minced chipotle peppers in adobo sauce, divided
-1-1/2 lbs. ground beef
-10 slices pepper Jack cheese
-1/2 cup mayonnaise
Place 2 rolls in a food processor; process until crumbly.
Transfer to a large bowl; add the salt, pepper, and 6 tsp. chipotle peppers.
Crumble beef over mixture and mix well.
Shape into 10 patties
Grille burgers, covered, over medium heat for 3-4 minutes on each side or until a meat thermometer reads 160 and juices run clear.
Top with cheese
Grills 1 minute longer or until cheese is melted
Split remaining rolls and grill, cut side down, over medium heat for 30-60 seconds or until toasted.
Combine mayo and remaining chipotle peppers; spread over roll bottoms
Top each with a burger replace roll tops!

As we close up the weekend, we are just having an old fashion BBQ with steaks, hotdogs, corn on the cob and potato salad! I hope you all enjoyed your weekend!

Sarah's Banana Bread!
One word describes this recipe YUMMY! I have made this many times and it ALWAYS comes out moist and delicious!
Please try it yourself and comment with your review!
1 1/2 cups of flour
1 tsp. baking soda
1/2 tsp salt
1 beaten egg
1 cup granulated sugar
4 T. melted butter
3 ripe bananas smashed
1 cup chopped walnuts or pecans (optional)
Preheat the oven to 350, and grease a loaf pan I like to use margarine and grease the pan all over. In one bowl combine the flour, baking soda, and salt and set aside. Using an electric mixer in a seperate bowl mix the beaten egg, sugar and melted butter. Add the mashed bananas to the mixture. Slowly combine the flour mixture until moist DO NOT OVER MIX. Add walnuts by stiring. Pour into loaf pan and bake for 60 minutes or until a toothpick comes out clean. I let it cool for a few minutes then turn the pan upside down and remove the loaf I wrap it immediatly in saran wrap. this makes one loaf, and is great anytime of the day! ENJOY!
